The hanging part is an internal organ located in the cow's diaphragm, in the thick part of the rib cage.Its meat is soft and contains just the right amount of fat, giving it a taste close to lean meat. It is similar to skirt steak, which is in the same diaphragm, but it is lighter in flavor. If you like the rich taste of fat, we recommend skirt steak, but if you don't like the strong flavor of fat, we recommend hanging tenderloin.
